Are you referring to the Mail app or a different email client?
If you are referring to Mail app, you need not activate spell check separately. It will underline the incorrect words automatically so that you can check and correct them. By default, the Spell check is switched on in Windows 8 mail app. if you want to check or change this settings, you can follow these steps:
a) Press Windows key +C, click on settings
b) click on Change PC settings and the select general on the left pane
c) Under spelling, you can either turn ON or OFF the deafult spell check.
