I have Windows 8 Pro with Media Center installed. Will I retain the Media Center Upgrade after the update? If it'll be released for download in the Windows Store, what will it be like? Would that be a small patch similar to Windows Update or will I download the entire ISO?

There is no ISO file. Windows 8.1 will install directly from the Windows Store. It will be similar to installing an app from the store, but with more options.
