"Server (LanmanServer)" is a Windows Server 2008 service that
supports file, print, and named-pipe sharing over the network for this
computer. If this service is stopped, these functions will be unavailable. If
this service is disabled, any services that explicitly depend on it will fail
to start.

"Server" service is provided by the svchost.exe program, see "svchost.exe Executable Program on Windows Server 2008" for details.
Disabling "Server" service will cause issues on running Windows Server 2008.
