Keeping E-mails on Windows 8 Mail App

I have recently purchased a new laptop which, of course, came with Windows 8 and the new Mail programme.

I previously used Incredimail but from what I have read will not be attempting to instal it this time around.

I also use Outlook at work, so am familiar with that, although I do not like it.

Anyway, with both of these mail programmes it is possible to create folders to help sort out mail, and these folders hold on to the mail in them until the point at which they are deleted.

I did manage to create a folder in Windows 8 Mail, and thought I had cracked it, but the mail in it disappeared after the month that I have set up for mails to be shown.

I used my folders as a quick and easy way to sort and save things I wanted to keep and I really miss them. Is there any way in Windows 8 that I have not discovered yet of doing this. So far I cut and paste into Word documents but that is honestly a bit of a pain. Then other thing I am doing is re-sending things to myself to keep them current but the inbox is just getting clogged up.

If I set my sync to the "anytime" mode I am assuming that when the messages are old enough to disappear from my Virgin account then they will also disappear on Mail, so that is not an answer?
